The Bon Appétit Bake Club podcast recently focused on a Plum Karpatka recipe, a Polish dessert, presented by senior test kitchen editor Jesse Szewyczk. The podcast also featured a visit from Ruby Bhogal, a finalist from *The Great British Baking Show*, and highlighted contributions from Bake Club members.
For six years, Jesse Szewyczk has wanted to publish a karpatka recipe. He described the dessert as “the drag queen of Polish desserts because it's just big, boisterous, and kind of silly.” Szewyczk explained he hadn’t made the entire cake before, but had experience with each component. Co-host Shilpa Uskokovic added that the goal is for Bake Club members to understand they can create complex desserts by mastering individual building blocks.
Szewyczk’s version of the karpatka includes an American twist, a no-bake cheesecake filling, alongside a traditional Polish plum compote. Podcast listeners shared photos and questions about their attempts at the recipe, and the Baker of the Month was awarded.
Ruby Bhogal, a season nine finalist on *The Great British Baking Show* (known as *Bake-Off* in the UK), appeared on the podcast to discuss her new book, *Around the World in 80 Cakes*, which includes a karpatka recipe. Bhogal can be found at @rubybhogal and on Substack.
