Cheesecake Funk, a bakery located in Excelsior, Minnesota, has become a popular destination thanks to its delicious cheesecakes and connection to the late musician Prince.
Located about 20 miles southwest of downtown Minneapolis, Cheesecake Funk opened in September 2025 and quickly gained a following in the Twin Cities. The bakery’s interior is decorated with photos of Prince, who lived just four miles away at Paisley Park and passed away ten years ago this year.
The bakery’s best-selling item is its turtle cheesecake, featuring dark chocolate, caramel, toasted pecans, and a crispy crust. Owner Vanessa Drews uses cinnamon and brown butter in the crust, the exact recipe of which is a closely guarded secret.
Drews, a single mother of two, began baking cheesecakes as a hobby in 2002, making them for family and friends. While working as a senior paralegal, she also sold merchandise at Paisley Park during public events hosted by Prince. In 2013, she brought a cheesecake to Paisley Park, leaving it in the fridge with a note inviting anyone to try it. She wanted to provide good food for Prince’s band members and employees who visited from around the world.
Drews soon discovered Prince was a fan of her cheesecakes when she saw a meme on what was then Twitter. The meme depicted monkeys attempting to revive a fellow simian with the caption, “The moment you find out somebody ate the last piece of Vanessa’s cheesecake.” The post was uploaded from an account managed by Prince. “I thought: ‘Oh my God, I’m the Vanessa he’s referring to!’” Drews said. “I was euphoric.” Prince began referring to her cheesecakes as “
